1 Container Hummus
1 Tomato – Diced
1 Cucumber – Diced
1/2 cup Non-Fat Greek Yogurt
1 tsp Paprika
1 Can Artichoke Hearts – Chopped
1/2 cup Roasted Red Pepper Spread (You can use roasted red peppers, chopped)
1/4 cup Reduced Fat Crumbled Feta Cheese
2 tbsp Fresh Parsley Kalamata olives – Chopped (optional)
In an 8 x 8 serving dish or bowl, spread the hummus evenly on the bottom. Layer the tomatoes and cucumber over top.
Dollop the yogurt over the tomatoes & vegetables, then gently spread with a spoon. Sprinkle the yogurt with paprika.
On top of the yogurt, layer the roasted red pepper spread, artichokes & feta cheese. Sprinkle the parsley over top and garnish with olives.
Serve with fresh vegetables or baked pita chips.
